Spiced Heartnuts

Warning: Once you start eating, it's hard to stop

Toast:
2 cups heartnuts in a 325ºF oven for 10 minutes. Allow to cool and rub off as many skins as practical.

Place nuts in a bowl and sprinkle the following seasonings and oil over them:
2 tsp. White sugar
½-¾ tsp. Cayenne pepper
2 tsp. Paprika
1 tsp. Chili powder
¾ tsp. salt
2 tsp. canola oil

Mix well and serve.

Cook's Note: By removing the skins and adding the spices, one avoids the bitterness of the toasted skins and reveals a beautiful golden nut.
